Since being in Florida, I have been privileged to enjoy fresh fruits. I love freshly squeezed orange juice from the oranges I just picked off a tree. Fresh strawberries in February! Picking grapefruit, lemons, and tangerines too! I have tried a few new fruits too. Star fruit and loquats are two that I have tried and like! Recently a friend of a friend offered fresh figs from her fig tree. Hmm...I like Fig Newtons but would I like figs? And if I did, what would I do with them? Hmm.
For several weeks now, I have been picking figs. I love just eating them fresh. But I decided to "experiment" and created a "topping". I'm loving the fruits of Florida!
Figs & Blueberries

Rinse fresh figs and blueberries. Make sure all stems are removed. Drain.
Place a ratio of 3 parts figs and 1 part blueberries in a food processor or blender. (for example, 3/4 c. figs and 1/4 c. blueberries)
Add 1 tsp to 1 Tbs. of lime juice depending on the quantity of fruit.
Process until completed chopped up and well blended. Almost a preserve or sauce texture.
Keeps in refrigerator for about 5-6 days.
Can be frozen up to 6 months...will be a little watery on thawing since fresh fruit.
Topping for toast, waffles, pancakes, oatmeal, brie cheese w/crackers, etc.
Mix into muffin, coffee cake, or other recipes where you might use blueberries or fruit.
